Potatoe Salad
Who doesn't like comfort food but comfort food doesn`t have to be junk or unhealthy. It can be and it should be very easy to make and should taste good too. In fact it should be like sort of opening a packet of chips. OK, not really but what we are going to do is also pretty easy.One Sunday I made a simple potato salad with sour creme and dill, toasted bread topped with our good old guacamole and a little new addition which is olive paste. Serve this to your kids for an exceptional meal in front of the idiot box(I know we all do it sometimes) and to your hubby with an IPL cricket matching running. They will be your slaves for ever!!!!!!!!!! or I am just kidding :)
Potato Salad
Ingredients
- 500 gms of potatoes, boiled
- 1 small tub of sour creme(natural yogurt can also be used instead of sour creme)
- 2-4 tbsp of milk
- 1 tsp of fresh lemon juice
- 1 bunch of dill leaves, fresh, chopped
- salt to taste
- few shakes of black pepper
- 1/2 tsp of red chili flakes
- 1 clove of pressed garlic
Method:
Boil the potatoes and keep them aside to cool. In the meantime add all the other ingredients together and mix them well. Now the potatoes should be cool enough to handle. Peel the potatoes while still a bit warm, break them with hand and add it to the creme mixture. If we add the potatoes while a bit warm, then they soak the spices and flavours nicely. If you are serving immediately then its fine but if you are serving it after a while, it might get a bit dry, so add a couple of spoons milk to it.
