Eggplant Raita Recipe, How to make Eggplant Raita  

Another very yummy dish is Aubergine Raita. Here is what you will need.

- 1 Baked Aubergine
- 500 gms natural Yogurt
- salt to taste
- chili powder to taste
- 1/2 tsp roasted and powdered cumin seeds. 
- 1 red onion, finely chopped.
- 1 green chili finely chopped
- fresh coriander to garnish. 

Method:
-Take a small pan. Heat 1 tsp oil in add and add the onions and green chillies to it. Fry them until the onions are golden.
- Take Yogurt in a glass bowl. 
- Add Aubergine, all the spices. Mix it well. 
- Keep it cool. Before serving garnish it with fresh coriander.
