Lemon Rice is a famous dish from the central India. It is mostly made with leftover rice from the previous day. This way you can pep up the rice and the dish comes out better with one day old rice. If you are going to make this dish with fresh rice then make sure you dont cook it too soft.
Here is what you will need:
Ingredients:
- 300 gms Basmati Rice, pre cooked
- 2 Tbsp of Oil
- a pinch of Asatofedtida
- 1/2 tsp Mustard seeds
- 2 Tbsp Peanuts
- 2 strings curry leaves
- 1 green chili, chopped
- 1-2 dried red chilies
- 1 tsp salt
- 1 tsp red chili powder
- 1 tsp turmeric powder
- 1 tsp ginger, finely grated
- 2 Tbsp Cashewnuts
- Lemon rind from 1 Lemon
- juice of one Lemon
- 2 Tbsp fresh coriander to garnish
Method:
1. Heat Oil in a non stick pan, when its hot, add the Asatofedita, cumin and mustard seeds and let them crackle.
2. Reduce the heat a bit, then add the peanuts and roast them until they look crunchy.
3. Add the curry leaves, green chillies and the cashewnuts, roast them for a bit.
4. Now in the precooked rice, add salt, turmeric powder, chili powder, lemon rind and lemon juice. Mix it all well in the pot itself. This way you will not break the rice.
5. Add the Rice to the pan, lower the heat, mix it all well with the nuts and cover it and let it steam for about 3-4 minutes.
6. Garnish with fresh Coriander and serve it with natural yogurt or any Raita.
If you are using some leftover rice then its fine but in case you are making fresh rice to make this dish, then here a tip for you. While cooking the Rice, add 1 tsp of turmeric to the Rice so that it will be yellow after cooking and the colour will be well incorporated in the Rice. Go easy on the Chilies. When I made this dish, it was a cold and windy day and I felt like eating something hot. Mind you, with these chillies it was yummy hot, but didn't go so well with M &R but in the end they enjoyed it as well with loads of Yogurt.
