There are sometimes those lazy rainy days when you don't feel like cooking anything but you and your family are super hungry. That's what happened to me yesterday :( I and we all were hungry. I finally got up and was hunting the fridge, I wanted to cook something delicious, easy and super simple. I found a tub of small cherry tomatoes, a Zucchini, some fresh baby spinach and of course, M`s idea was to incorporate some feta cheese too. So we topped it with crumbled feta and chili oil, it turned to be quite a treat for us and we enjoyed it watching IPL.
Here is what yo will need:
Ingredients:
- Pasta of your choice for 4 people(I took half Füssli and half Ditalli)
- 10-12 cherry tomatoes, quartered or 4 normal tomatoes chopped
- half red capsicum, chopped into small cubes
- 2 cloves of garlic, pressed
- salt to taste
- few shakes of black pepper
- 1/2 tsp of dried oregano
- hand full of fresh Basil leaves, chopped
- a big pinch of red chili flakes
- big hand full of fresh baby spinach, roughly teared
- a good glog of extra virgin olive oil
- a small block of feta cheese, crumbled or to taste
Method:
- Boil the pasta according to the instructions. I took two different kinds of pasta here and the cooking time was a bit different so make sure to put the one before which needs more time, its quite logical but also very important.
- While the pasta is boiling prepare all the veggies and take them in a salad bowl, add the olive oil and all the spices and mix it all well, let it sit for the flavours to work.
- When the pasta is cooked, drain it, add another glog of olive oil to the pasta and toss it well.
- Now add all the prepared veggies to the pasta pan, toss it all well, taste to see if it needs something else like salt, fix it.
- Serve it in a bowl, drizzle some chili olive oil if you have and top it with crumbled feta.
- Enjoy.
PS: This pasta dish can be served immediately after preparing it, then it will be a bit warm and comforting but it can very well be served cold or chilled as a pasta salad. This also makes a great dish for summer parties and a good lunch box meal for kids.
